Shagbark Hickory Syrup

Amazing as it sounds, every bit of Hickory flavor in our products comes completely from the bark of the Shagbark Hickory trees that grow on our farm.

We are One of only a few Artisans in the World  who craft Shagbark Hickory Syrup.  It is an extremely rare product.

Q: Why is Hickory Syrup so Rare?

A: Crafting a fabulous syrup from a natural, bitter, woody bark is a very difficult and labor intensive process, much like the crafting of a fine wine or microbrewery beer–each crafting is unique.

A: The Northern Shagbark Hickory tree, from which our Hickory Syrup is crafted,  is limited to only a small geographic region of the United States.

Why make it?

Because of the amazingly complex flavor, no other syrup even comes close to the sweet-campfire taste of Hickory Valley Farms Hickory Syrup.

“When a Hickory Fan samples our Syrup, and I see that look of astonished delight transform his or her face, that’s what keeps me going – knowing that our hard work is worth it.” – Hickory Bill

Wildcrafted by Hand in Small Batches

Hickory Fans marvel at the story that brought them this “amazing” syrup.

When a member of the family was diagnosed with an auto-immune disease and told that there was nothing medicine could offer, Hickory Bill turned to alternative solutions.

“We learned that the American Indians used Hickory Bark for joint pain. We had a large stand of Shagbark Hickory trees on our farm, so we started using the bark and found that it helped.” – Hickory Bill

After several years of using the bark just to make a tonic beverage, Hickory Bill began experimenting with the possibilities of making a Hickory Syrup. It took several years, lots of frustration, and near defeat but the enthusiasm from Hickory Fans tells Hickory Bill that his efforts were not wasted.
